Raw vegan pizza

When I first saw this, I will be honest, I wasn’t convinced that it was going to sway me into liking the raw pizza idea. However, it was one of the nicest dishes I have had, thanks to Amity Wellness.

The pizza base

1 cup of coconut meat

2 cups of almonds

1 cup of cashews

2 tbsp onion

1 tsp salt

1/4 cup of olive oil

1 tbsp of garlic

Blend all of the ingredients and place into a bowl. Hand mix to ensure that all of the ingredients are well mixed. Smooth out onto a sheet of grease proof paper in to a thin cracker sheet. Place on low in the oven on low and dehydrate until it becomes fully dry and crispy.

Sauce

2 cups of tomato blended into a paste

2 tsp oregano

pinch of black pepper

2 cloves of garlic

1 tsp olive oil

Mix the ingredients together. Then, break off some of the crackers to form a base. Spread over some of the tomato mixture, layer lettuce, cucumber, peppers, drizzle more of the sauce over and top with vegan cheese. It is a chance to get creative with your toppings as long as they are raw. Finish off with a pinch of black pepper and enjoy!
