Raw Vegan Cinnamon Buns

These cinnamon vegan and gluten free buns are well worth trying. My favourite cake is a cinnamon swirl, but being gluten and dairy intolerant, meant I had to give them a miss. Until now of course. Vegan baking has come along so much since I started enjoying it.

This recipe does require a dehydrator, however, you can use an oven on a low temperature.

Makes 12

Ingredients

5 dates

1/4 cup of water

1 cup ground flax

1 1/4 cup of almond flour

1 cup spelt flakes

1 cup pecans, finely chopped

2 tsp cinnamon

3 tbsp. olive oil

1/4 agave nectar

1 cup water

Bun Process

  1. Soak the dates until they are soft and then blend with 1/4 cup of water until it forms a paste. Set aside.

2. Combine the flax and almond flour, finely chopped pecans and spelt flakes.

3. In a separate bowl, combine the date paste and olive oil, 1/4 cup of agave nectar, and 1 cup of water.

4. Mix the wet ingredients in with the dry. Spread it into a rectangle on a non stick dehydration sheet, a little less than 1/2 inch thick.

5. Dehydrate in a machine or low temperature oven for 30 – 40 minutes. This can vary but I put mine on 100c. Then, turn it, removing the paper and dehydrate for a further 20 minutes.

Filling Ingredients

1 x young coconut flesh or 1 cup of coconut flakes

1 cup of cashews, soaked over night, drained and rinsed.

1/2 cup almonds, soaked over night, drained and rinsed.

1/4 cup agave nectar.

1 tsp vanilla extract.

1/2 cup raisins.

Filling Process

  1. Excluding the raisins, put everything in a food processor and blitz until smooth. Then stir in the raisins.

2. Place the ‘bun’ element (first stage of the process) on parchment paper.

3. Spread the filling on the bun.

4. Gently roll the bun, slice and top with icing.
